I baked a loaf of bread today, a good thing since we’re out and have been out for a while now.
I did it without a recipe, using a ratio, and it is the equivalent of leftovers:
Everything but the Kitchen Sink Bread
10 oz. White Whole Wheat Flour
5 oz. Bread Flour
1 tsp. instant yeast
1 tsp. salt
4.5 oz. beer
4.5 oz. milk
1.5 Tbsp. butter
Throw everything in a bowl and mix until a shaggy ball. I ended up using a little bit more beer (~ 3 Tbsp.) to make it hang together better. Knead until elastic. Let rise until doubled. Shape into loaf and let rise in oiled loaf pan until top of loaf crests the pan. Bake at 350 degrees until done (don’t remember how long I did it… but the internal temp was just over 195 degrees).
The beer has been sitting in the fridge for a while, and the butter was left over from another baking project. I used milk because I like my bread enriched.
I have no idea what it will taste like (still cooling), but it looks okay. We’ll see at breakfast tomorrow!
